Ingredients

For the Dry Mix
220 gwhite rice flour
80 gtapioca starch
2 tbsppsyllium husk (whole)
1 tbspinstant yeast
1½ tspfine sea salt
For the Wet Mix
320 mlwarm water
2 tbspolive oil
1 tbsphoney or maple syrup

Instructions

Whisk the psyllium husk into the warm water and let it sit for 2–3 minutes until it thickens into a loose gel. [PLACEHOLDER STEP]

In a large bowl, whisk together the rice flour, tapioca starch, yeast and salt. Pour in the psyllium gel, olive oil and honey, then mix to a smooth, sticky dough. [PLACEHOLDER STEP]

Shape into a log with wet hands and place in a lined loaf tin. Cover and let rise in a warm spot for about 60 minutes, until risen by half. [PLACEHOLDER STEP]

Bake at 220°C (430°F) for 45 minutes, until deep golden and hollow-sounding. Cool completely on a rack before slicing. [PLACEHOLDER STEP]

Tips & notes
