For the Frosting
200 gdark chocolate (70%), chopped

Instructions

1

Preheat oven to 175°C (350°F). Line two 20 cm round cake tins with baking paper. [PLACEHOLDER STEP]

3

In a separate bowl, beat the eggs, coconut sugar, melted oil and vanilla until smooth. Fold the wet mixture into the dry until fully combined. [PLACEHOLDER STEP]

4

Divide the batter between the prepared tins and bake for 30–35 minutes, until a skewer comes out clean. Cool completely before frosting. [PLACEHOLDER STEP]

5

Make the ganache: heat the cream until just simmering, pour over the chopped chocolate and honey, and stir until smooth. Let it cool to a spreadable consistency. [PLACEHOLDER STEP]

6

Level the cakes if needed, stack with ganache between layers, and coat the outside. [PLACEHOLDER STEP]

Tips & notes

PLACEHOLDER TIP — Don't skip cooling completely; almond flour cakes are fragile when warm.
PLACEHOLDER TIP — The ganache sets firmer at room temperature than in the fridge — let it cool at room temp for easy spreading.
PLACEHOLDER TIP — Dutch-process cocoa gives a deeper colour and less acidic flavour than natural cocoa.

Storage & freezing

PLACEHOLDER STORAGE TEXT. Store covered at room temperature for up to 3 days, or refrigerate for up to 5 days. The frosted cake freezes well for up to 2 months — wrap individual slices for easy serving.
