What Is Cassava Flour?
Cassava flour is made from the whole cassava root — a starchy tropical tuber that is a dietary staple for over 800 million people worldwide, particularly in South America, Africa, and Southeast Asia. The root is peeled, dried, and ground into a fine, white flour that is remarkably neutral in flavor and white in appearance.
Cassava flour is not the same as tapioca flour (also called tapioca starch), though both come from the cassava plant. Tapioca flour is extracted starch only — the fibrous parts of the root are removed during processing. Cassava flour, by contrast, is made from the whole dried root, retaining fiber and nutrients that are absent in tapioca starch. The two products behave quite differently in baking.

One important note: raw cassava contains cyanogenic glucosides, which are toxic in quantity. Reduced is not the same as eliminated: studies of cassava flour sold in some markets have found levels well above that limit, and the reduction depends entirely on the processing being done properly. Cassava flour is widely celebrated — sometimes with justified enthusiasm, sometimes with slight overstatement — as the closest thing to a 1:1 all-purpose flour substitute in gluten-free baking.
Neutral flavor — cassava flour has an extremely mild flavor with no pronounced earthiness, nuttiness, or bitterness. It is among the most neutral-tasting gluten-free flours, approaching white rice flour in flavor blandness (in the best possible way).
White color — cassava flour is very white, producing baked goods with a clean color similar to wheat-flour products.
Texture — when used at high proportions, cassava flour produces a texture that is remarkably similar to wheat flour in certain applications — particularly tortillas, flatbreads, and pastry. The texture has some elasticity compared to most gluten-free flours, which usually produce crumbly, fragile products.
Moisture absorption — cassava flour absorbs slightly more liquid than wheat flour. When substituting 1:1, you may need to reduce liquid by about 10–15% or add a small amount more flour.
No binding agent required (sometimes) — in tortillas and flatbreads, cassava flour can often be used without xanthan gum or other binders and still produce a flexible, pliable result. This is unusual among gluten-free flours and is one of cassava flour's most valued properties.
Limitations — for yeasted bread with a fully open crumb structure, cassava flour alone still falls short of wheat flour. High proportions of cassava flour can also produce a slightly tacky, gummy texture in cakes. Blending with tapioca, potato starch, or arrowroot improves outcomes.

- Quick breads and muffins — good in moderate proportions; may need blending for optimal texture in larger loaves.
- Crackers — works well with minimal added fat.
Substitution Ratios
- 1:1 for all-purpose flour — in tortillas, flatbreads, and many quick breads; the most reliable 1:1 gluten-free substitute for these applications.
- In blended recipes — can replace wheat flour at 70–80% with a small amount of tapioca or arrowroot for better structure.
Cross-Contamination Notes
Cassava is a root vegetable and contains no gluten naturally. It is not related to any gluten-containing grain. Cross-contamination risk is lower than for many grain-based gluten-free flours, as cassava is usually processed in dedicated root-starch facilities.
